  • Tom Collins.

    Master the art of the classic Tom Collins cocktail, plus three twists. Gin, lemon, sugar syrup and soda water are the ingredients for your cocktail cupboard.

    What you’ll need.

    50ml gin

    25ml lemon juice

    25ml sugar syrup

    125ml chilled soda water

    How to make it.

    STEP 1

    Build the drink over plenty of ice in a Collins glass, stir gently and garnish with a slice of lemon.

    3 TWISTS

    Raspberry Collins

    Raspberries give this twist on the classic Collins a pretty splash of colour. Start by gently muddling a handful of raspberries in the bottom of an empty Collins glass, then add the ice, all the other ingredients and mix well with a long handled spoon. Garnish with an orange slice.

    Brandy Collins

    This is a really refreshing way to enjoy cognac. For best results, use a young-ish VS or VSOP cognac that’s nice and fruity. Just make the drink as normal, substituting cognac for gin, then garnish with a slice of ginger or a ribbon of lemon peel.

    Elderflower Collins

    Elderflower and lemon is a winning combination. You can make it with elderflower cordial or liqueur for something a touch more boozy. Mix the drink as normal, but use the liqueur or cordial in place of the sugar syrup. Garnish with a lemon slice.

  • Summer Cup.

    Get into the summer vibe with this fruity mocktail featuring red berries, lemonade, mint, and cucumber. Cool and refreshing, it’s fabulous on hot summer days.

    What you’ll need.

    1cm thick slice of cucumber

    1 sprig mint

    few frozen red berries

    120ml clear, sparkling lemonade

    ice

    To garnish

    more frozen berries , chopped fruits, cucumber slice, mint, citrus – all optional

    How to make it.

    STEP 1

    Chop the cucumber and mint sprig into small pieces. Bring 200ml water to the boil in a small pan and then add the mint and cucumber. Turn off the heat and leave for 2 mins. Add a small handful of frozen berries, let them defrost for a minute, then crush them lightly with the back of a spoon. Strain the mixture. This will keep in the fridge for up to 24 hours and will be enough to make four drinks.

    STEP 2

    Pour 40ml of your strained mixture into a tall glass. Add a handful of ice and top up with 120ml lemonade. Garnish with whatever chopped fruit you like or some more frozen berries and mint leaves if you have them. Stir gently to combine.

  • The Chi Chi.

    The chi-chi is a favorite frozen cocktail that has a beautiful ocean blue color and familiar tropical taste.

    It offers something a little different than the average margarita or daiquiri

    and is sure to add a splash of fun to your summer!

    Filled with pineapple and coconut flavors, the chi-chi is like a blue version of the piña colada with a vodka twist.

    It has all the same flavors, they’re just dressed up in a different package.

    The stunning blue color comes from blue curacao. the most reliable liquor in the bar to get that color.

    It’s also a little creamier than most frozen cocktails, because it uses both cream of coconut and vanilla ice cream.

    Take this one poolside or just sick back and relax with it in the garden!

    Either way, it’s a perfect treat for a hot summer day.

    What you’ll need.

    60ml vodka

    15ml blue curacao

    20ml cream of coconut

    Half a cup of cubed pineapple

    One large scoop of vanilla ice cream

    Half a cup of crushed ice

    A wedge of pineapple to garnish

    How to make it.

    pour the vodka, blue curaçao, and cream of coconut in to a blender.

    Add the pineapple, ice cream, and crushed ice.

    Blend until smooth.

    Pour into a highball glass and slot the pineapple wedge on the rim.

    Sit back, relax, and enjoy.

  • Cherry Blossom.

    What you’ll need.

    1.25 oz 1800 Silver Tequila

    1 oz lime juice

    1 oz grapefruit juice

    .25 oz grenadine

    Grapefruit slice or maraschino cherry for garnish

    Salt as needed

    How to make it.

    Pour all ingredients into shaker and shake well.

    Strain into a salt rimmed martini glass or serve over ice.

    Garnish with a grapefruit slice or cherry.

  • The Horcrux.

    What you’ll need.

    ¾ oz Tequila

    ¾ oz Vodka

    ¾ oz Triple Sec

    ¾ oz Gin

    ¾ oz light Rum

    1 oz Sour Mix

    Splash Coke

    Garnish licorice stick

    How to make it.

    Combine liquors into glass with sour mix.

    Top with Coke.

    Garnish with licorice stick.

  • The Glass Slipper.

    What you will need.

    Vodka

    Blue curacao

    Pineapple juice

    Grapefruit juice

    Coconut nectar

    Cream.

    How to make it.

    The Cinderella glass slipper is super easy to make. Just add ice to a cocktail shaker[ and pour in the other ingredients. Give the shaker a vigorous shake until everything is well combined.

    Strain into martini glasses and serve.

  • The Velvet Elvis.

    What you’ll need:

    1oz Chambord Black Raspberry Liquer

    1oz Jack Daniels

    A dash of Lemon and Lime Sprite

    Slice of lime to garnish.

    How to make it.

    Add Jack Daniels, Chambord and Lemon and Lime sprite to a cocktail shaker.

    Shake thoroughly.

    Pour into a glass with ice.

    Add slice of lime to garnish.

  • Virgin Pina Colada.

    What you’ll need.

    150ml pineapple juice

    50ml coconut milk

    25ml lime juice

    ice

    cherry, to garnish

    For the mock rum syrup

    100g dark brown muscovado sugar

    1 pineapple, a few strips of skin, plus leaves to garnish

    5 black peppercorns

    5 cloves

    1 cinnamon stick

    How to make it.

    STEP 1

    To make a mock rum syrup, put the dark brown muscovado sugar and 200ml water in a saucepan, stir well and heat gently until the sugar has dissolved. Add a few strips of skin from the pineapple, add the black peppercorns, cloves and a cinnamon stick, then bring to the boil. Turn off the heat and leave to infuse until cold. Strain into a jug and set aside in the fridge until needed. Will keep for up to three days.

    STEP 2

    Pour the pineapple juice into a tall glass, and add the coconut milk and lime juice. Stir gently. Fill up the glass with a handful ice then slowly add 25ml of the syrup so it sinks to the bottom. Garnish with pineapple leaves and a tinned cherry.

  • Harvey Wallbanger.

    A cocktail that is a balance of sweet and sharp for those of us who can’t decide which way to sway.

    What you’ll need.

    Ice

    50ml vodka

    1 large or 2 small oranges juiced.

    Half a lemon juiced.

    15ml galiano

    1 maraschino cherry

    1 orange slice

    How to make it.

    Fill a cocktail shaker with ice and add the vodka, orange and lemon juice. Shake together until the outside of the shaker feels cold.

    Add a few ice cubes to a tall Collins glass then carefully double strain the cocktail into it.

    2. Add more ice to fill the glass if needed then slowly pour the galiano over the top.

    3. Thread the cherry and orange slice onto a cocktail stick then place across the rim of the glass.

  • Black Russian.

    A classic black russian cocktail is made with vodka, coffee liqueur and cola. Garnish with a maraschino cherry and serve as a decadent after-dinner drink.

    What you’ll need.

    50ml vodka

    25ml coffee liqueur

    ice

    1 maraschino cherry

    cola to top up, chilled (optional)

    How to make it.

    STEP 1

    Put the vodka and the coffee liqueur into a tumbler filled with ice and stir gently for 30 secs – 1min. Add the cherry and serve. Top with a splash of chilled cola if you prefer a longer drink.
