  • The Polar Express.

    This Christmas story tells of a boy who has reached an age when he begins to have doubts believing in Santa. Late one Christmas Eve, the young boy is lying awake waiting for the sound of sleigh bells ringing from Santa’s sleigh. Five minutes to midnight his room begins to shake, and he hears a thunderous sound outside his window. The boy jumps from his bed and sees a train in the middle of his street. The boy grabs his robe and rushes out the front door to look at the train. The train’s conductor asks the boy if he is getting aboard. The boy asks, “Where are you going?’ ‘To the North Pole, of course, this is the Polar Express!’ At the last minute, the boy jumps on the train and finds other young boys and girls going to the North Pole. Their adventure begins. On the train he meets lots of other children, among them a know-it-all, a clever girl and a poor boy. During the trip to the North Pole, there are several complications and complications before the end of the journey comes. Among others, the tracks are covered with ice and a child loses its ticket. When they reach the north pole, the children meet Santa Claus, and the boy gets the very first Christmas present of the year, a sleigh bell from Santa Claus’ sleigh. They return safely to their homes in time for Christmas Day, and the boy finds the Christmas Present from Santa beneath his tree

    A cheeky and refreshing fruity number where pineapple and lime juice are spruced up with Herradura tequila and thyme.

    What you’ll need.

    · 15ml lime juice

    · 20ml thyme syrup

    · 30ml pineapple juice

    · 5ml Maraschino

    · 40ml Herradura Blanco tequila

    · a sprig thyme, to garnish

    How to make it.

    · STEP 1

    Shake together all ingredients. Strain, and pour into a martini glass. Add a sprig of thyme to garnish.

    What you’ll need.

    To make simple syrup, just heat equal parts sugar and water until fully dissolved, then cool.

    1/4 oz simple syrup
    1/4 oz lemon juice
    1.5 oz ginger beer
    Champagne or other sparkling wine

    How to make it.

    Mix simple syrup and lemon juice in the bottom of a champagne flute. Add ginger beer and fill with Champagne.

    What you’ll need.

    · 1/2 oz Dark Rum

    · 1 1/4 oz Spiced Rum

    · 1 1/2 oz Orange Juice

    · 1 1/2 oz Pineapple Juice

    · 1 oz Sweet and Sour Mix

    How to make it.

    Shake and strain this drink into an ice-filled hurricane glass.

    Float myer’s rum and garnish with a pineapple, orange, or cherry pinwheel.

    Best served in a Hurricane Glass.

  • Trini Stew Chicken.

    Course: Meats

    Cuisine: Caribbean. Creole.

    Prep time: 15 minutes.

    Cook time: 40 minutes.

    Total Time: 55 minutes.

    Ingredients.

    Chicken (2-3 pounds), cut up, seasoned and marinated overnight for at least 1 hour.

    3 tablespoons of sugar

    1 small onion, chopped

    3 cloves of garlic, chopped.

    1 sprig of chive, chopped.

    2 sprigs of fine leaf thyme, chopped.

    2 leaves of big leaf thyme, chopped.

    2 sprigs of parsley, chopped.

    1 teaspoon of tomato paste (optional.)

    Salt to taste.

    Pepper to taste.

    Water.

    Instructions.

    Heat a deep heavy pot on a medium fire.

    Add the sugar to the pot.

    Allow it to simmer and melt until it looks golden brown.

    Next add the marinated meat and one quarter of a cup of water.

    Allow the browning to coat the meat evenly.

    Lower the heat and allow to simmer for 2 minutes.

    Add the chopped, fresh herbs.

    Add one and a half cups of water to just about cover the chicken.

    Add salt, pepper and chopped herbs.

    Cook until the meat is tender (about 25-30 minutes).

    You may add a teaspoon of tomato paste to taste.

    Serve with rice.
